Firecracker Rice

My kids love this rice. The recipe serves 4 but we usually double it, because the way my children devour it, it serves 2! Works well with Tex-Mex foods, and barbequed ribs.

1 c converted rice
2.5 c. Clamato juice (regular or spicy, depending on your taste)
1/4 c. diced onion
1 tsp chili powder
1/2 tsp cumin, ground
1/4 tsp salt (can omit - enough salt in Clamato)

Combine all ingredients in a 1.5 quart (1.5 litre) casserole dish. Microwave on high, uncovered, for 15-20 minutes, until rice is tender and liquid is almost all absorbed, stirring occasionally. To double, increase cooking time to 30-40 minutes (depends on microwave), and use bigger casserole dish.
